Do #Vegan #Recipes Scare You? Banana Apple Bread @DonnaFaz

My son and his girlfriend came to visit this weekend. He is vegetarian; she is vegan. So I made a banana apple bread that—even though it contains no eggs or dairy—turned out DELICIOUS. It’s light and moist and full of flavor.

This makes a wonderful afternoon “tea time” or “coffee break” snack. I hope you’ll try this recipe even though it’s got that label… vegan. J

Banana Apple Bread

1 3/4 cups flour (I used 1 cup all purpose and 3/4 cup spelt flour)
2 1/4 teaspoons baking powder
1/4  teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1/4 cup sugar
2 large, ripe bananas
1/2 cup non-dairy milk (I used almond milk)
2 tablespoons molasses
2 tablespoons canola oil
1 teaspoon vanilla extract
1 tart apple, grated
1/2 cup walnut pieces

1.    Preheat over to 350°F. Prepare a loaf pan using non-stick spray.
2.    Mix together dry ingredients: flour, baking powder, baking soda, salt, pumpkin pie spice, sugar. Stir until combined.
3.    Add the banana to a food processor. Pulse to mash. Add the milk, molasses, oil, and vanilla to the processor bowl and process until smooth.
4.    Pour the wet ingredients into the dry and stir until just combined. Add the apple and walnuts, stir just until evenly distributed. Do not over mix.
5.    Pour batter into the loaf pan and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Let cool for a bit before removing from pan.

I am always looking for good vegan and vegetarian recipes. Do you have a favorite? Do you know any vegans or vegetarians?

The Rainbows of Life by @DonnaFaz #Quotes #Inspiration

Yeah, the title of this post sounds a tad sappy. I apologize for that. I took a couple of pictures this past weekend that I wanted to share—a rainbow so big, I couldn’t get it all in one shot. And offering some prophetic quotes about rainbows along with the images just seemed like a good idea.

Here on Maryland’s Eastern Shore, a spring storm rolled in. The ominous rain clouds pushed north east and this gigantic rainbow appeared over the ocean. It was spectacular!

The promised quotes about rainbows:

Be thou the rainbow in the storms of life. The evening bean that smiles the clouds away and tints tomorrow with prophetic ray. ~Lord Byron

God puts rainbows in the clouds so that each of us—in the dreariest, most dreaded moments—can see a possibility of hope. ~Maya Angelou

The soul would have no rainbow if the eyes had no tears. ~Native American Proverb

Rainbows apologize for angry clouds. ~Sylvia Voirol

When you reduce life to black and white, you never see rainbows. ~Unknown

Don’t forget that your spirit-twinkle makes Life’s rainbow shine bright. ~Terri Guillemets (So don’t suppress your spirit-twinkle!)

Count your rainbows not your thunderstorms. ~Alyssa Knight

it seems man has learned
not to see
not to know
for he’s found the pot
of gold
but lost the rainbow
~Barry DeCarli

Somewhere over the rainbow, way up tall,
there’s a land where they’ve never heard of cholesterol. ~Allen Sherman

I hope you hung in there for that last quote. That’s my favorite. *laughing* Do you have a rainbow quote you’d like to share? A rainbow story? Please share in the comment section.

Quotes About #Spring ~ @DonnaFaz

Warm weather, opening the windows to fresh breezes, crocuses, daffodils, and dandelions, budding leaves, clear skies, sunshine… These are just a few of the reasons I love spring. Something about this special season makes me feel very happy. I can’t figure out if it’s the peeling off of heavy coats, mittens, and hats, or the anticipation of walking through the soft, green grass in my bare feet. I love Spring!

Enjoy these lovely quotes about the season:

“It is spring again. The earth is like a child that knows poems by heart.” ~Rainer Maria Rilke

“In the spring, at the end of the day, you should smell like dirt.” ~Margaret Atwood

“Your love is the only reason why a beautiful spring is my life’s only season.” ~Unknown

“No man can taste the fruits of autumn while he is delighting his scent with the flowers of spring.” ~Samuel Johnson

“April hath put a spirit of youth in everything.” ~William Shakespeare

“In the spring, I have counted 136 different kinds of weather inside of 24 hours.” ~Mark Twain

“Spring shows what God can do with a drab and dirty world.”  ~Victor Kraft

“Can words describe the fragrance of the very breath of spring?”  ~Neltje Blanchan

“Spring is when life is alive in everything.” ~Christina Rossetti

“Spring is when you feel like whistling even with a shoe full of slush.” ~Doug Larson

“It’s Spring Fever! That is what the name of it is. And when you’ve got it, you want—oh, you don’t quite know what you want, but it just fairly makes your heart ache, you want it so!” ~Mark Twain

What’s YOUR favorite thing about Spring?

TWO HEARTS IN WINTER
Book 2 of the Ocean City Boardwalk Series

Loss and betrayal have caused Heather Phillips to give up on love. She’s thrown herself into running The Lonely Loon, her Bed and Breakfast located on the boardwalk of Ocean CityMaryland. The “off season” in this tourist town is usually a time of rest and reflection for her; however, DB Atwell, a famous author, arrives at The Loon for the winter to finish his long-overdue novel. Daniel, too, has faced grief, and tragedy continues to haunt him. Once Heather and Daniel meet, their lives will never be the same.

Reminiscent of Nights in Rodanthe by Nicholas Sparks and culminating in a happily-ever-after similar to the great Nora Roberts, Two Hearts in Winter is a story about learning to let go of the past, about realizing that, though hardship affects us, it need not define us, and about coming to understand and truly believe that beauty is sometimes covered in scars. The human heart has an amazing ability to forgive, to heal, and to hope, especially when touched by love.
